Pepe’s Pastizzi’s uses Unox combi ovens at MasterChef LIVE

Unox  BakerTop combi ovens were used to cook Pepe’s Pastizzi’s mouth-watering range of pastizzi’s at MasterChef LIVE recently.
Three years ago the two companies formed a mutually beneficial relationship with one another, whereby “we come and support them at these shows where they are getting their product out there, and then they give us products when we’re doing trade shows as well,” explains Sean Cunnington, active marketing chef, Unox.
This is an incredibly savvy move, as it means both Unox and Pepe’s Pastizzi’s have a presence at a broad range of different events and exhibitions, many of which they may not typically appear at. This undoubtedly enhances brand exposure for both companies.
When asked how all of this came about, Cunnington explains it was quite simple, really.
“These guys did a bit of research over a few years and they found that our ovens are the best for cooking their pastries,” he notes.
The combi ovens used by Pepe’s at MasterChef LIVE feature 16 trays, and they are designed specifically for the bakery market.
A chef touch digital control panel allows users to increase humidity levels, or extract humidity from the ovens at precise 10% increments up to 100%, which allows for maximum control.
The combi ovens can extract excess moisture from bakery products, which are typically moisture rich, and subsequently produce perfectly crisp breads and pastries.
As GoHospitality  chats with Cunnington, a fresh batch of the pastizzi’s come steaming out of the Unox combi ovens.
Visitors are invited to try the pastizzi’s, which come in a range of flavours including creamy ricotta, spinach and ricotta, sun-dried tomato and cheese and vegetable peas.
As they bite into their pastizzi’s many comment on how delicious they taste, and they applaud the fact that the pastry is crisped to perfection.
It is also evident that each pastizzi is cooked in its entirety. This is thanks to the combi ovens unique fan system, which “auto-reverse’s every two minutes so you get complete uniform cooking from top to bottom, front to back,” adds Cunnington.
Operators can program up to 99 different cooking programs into the combi ovens, and each may contain up to nine cooking steps, which makes them incredibly easy for staff to use.
On average, Pepe’s Pastizzi’s uses the Unox combi ovens at four shows each year. Similarly, Unox uses the company’s pastizzis to demonstrate the capabilities of its ovens around four times per year.
